This wine comes from the best wine cooperative in France, La Chablisienne, founded in the 1920s in Burgundy, under the guidance of Abbé Balitrand. To ensure the maximum expression of the different parcels, each winemaker can maintain control over the entire winemaking process, while the cooperative intervenes to complete the aging and refinement process and takes care of marketing and commercialization.
For this luxury Chardonnay, grapes are harvested from 40-year-old vines planted in the typical stunning soil of Chablis - Kimmeridgian limestone with more marine fossils, which makes the wines complex, mineral, and rich.
When pouring this golden-hued wine into the glass, the nose picks up notes of green apples, aromatic herbs, a hint of flint, and some white flowers in the background. There is also a touch of spice. Take a sip and you will discover that it has substance: it is rich and structured, but has a freshness that makes it well-balanced. It has a mineral backbone and is elegant and deep.

The Chablis Premier Cru “Fourchaume” by La Chablisienne is born in the heart of lush Burgundy. The winery is the result of synergistic work and cooperation: its history began in 1923, when a group of winemakers led by Abbé Balitrand decided to join forces to face the economic difficulties of the time. Until the 1950s, the grapes from the members were delivered to La Chablisienne, which took care of transforming the raw material and creating the final product to be marketed. Over time, the production style changed, and from that moment the harvest was delivered in the form of unfermented juice, thus creating a unique and inimitable production style; the indispensable interaction among winemakers also completes the picture. Today, the winery aims to continue improving in all the different stages that lead to the final bottle.
The vineyards of Chablis Premier Cru “Fourchaume” by La Chablisienne are among the oldest in France. The sediments in the soil of large quantities of exogyra virgula, that is, fossilized oysters, give the unique and particular character found in the wines. The presence of the Serein river is also important as it contributes to the presence of minerals and nutrients in the soil, useful for the lush growth of the plants; the south-facing exposure of the vineyards ensures a constant presence of sunlight among the rows. The grape harvest is done by hand; in the winery, the must is cold decanted before alcoholic fermentation and malolactic fermentation in steel and in barrel. It ages for 12 months in wood.
The color of Chablis Premier Cru “Fourchaume” by La Chablisienne is a golden yellow with intense and brilliant reflections. The aromas are those of ripe yellow-fleshed fruit, buttery and mineral notes that balance everything; on the palate, it is delicate, enveloping, and sinuous thanks to the pleasant hints of vanilla and caramel, combined with a long mineral finish that calls for glass after glass.

Silver Heights represents a new horizon for the wine world. It is, in fact, a Chinese estate located in the Ningxia region. Its origins date back to 1997, when Gao Lin began cultivating vines in these lands, which had particularly favorable pedoclimatic conditions for viticulture. The following year, he embarked on a series of trips to France and Germany to study and expand his knowledge of new trends and techniques practiced in Europe. His daughter refined her technical preparation with oenology studies in Bordeaux, where she also worked at Château Calon Ségur, and then completed her knowledge with a series of visits to the main wine regions of old Europe before returning home with a valuable wealth of experience.
The new generation has consolidated the company, making it one of the most important high-end estates in the country. It quickly stood out in the Chinese landscape thanks to a wealth of knowledge from the best European domaines. Today, the property covers an area of about fifty hectares, cultivated following biodynamic principles. This choice is based on respect for the environment, allowing only the use of natural substances. In the vineyard, copper sulfur, horn manure, horn silica, and other herbal infusions are used, making the plants stronger and more resistant to diseases. All inter-row work and grass cutting are done mechanically, promoting the practice of green manure to make the soils more fertile in an absolutely natural way without fertilization.
Obviously, the same production philosophy applies to the winery, with absolute attention and respect for the raw materials, to maximize the varietal aromas of the grapes and the character of the terroir. The vinifications are carried out with spontaneous fermentations and the use of indigenous yeasts. The aging process follows the great French tradition, both for whites, often inspired by the great Burgundy school, and for reds, which instead are based on Bordeaux models using Cabernet Sauvignon and Merlot.

Yamanashi - Koshu 2021 - Château Mercian

This wine is made from Koshu, the indigenous grape variety of Japan, whose origins date back to 1186, when it was discovered in the wild in Katsunama, Yamanashi Prefecture. The Koshu grapes are cultivated in the Iwasake district of Yamanashi Prefecture, where the soils are gravelly and clayey with good drainage. Over 40% of all wine grapes grown in Japan are of the Koshu variety. Chateau Mercian is the oldest winery in Japan, founded in 1870.
Fermented in barrel for 14 days, the wine was also aged for 4 months in oak.
Citrus aromas of kabosu and yuzu with notes of white flowers, vanilla, almonds, and hazelnuts. With refreshing balanced acidity, rich fruit flavors, and concentrated citrus oil.

We are located in Planina near Ajdovš?ina in Vipaska Dolina, Slovenia, where the main cultivated grapes are Sauvignon, Cabernet, Malvasia Istriana, and Ribolla, along with indigenous varieties that few continue to produce, such as Zelen and Pinela.
The soils of Vipaska are rich in schist, sandstone, marl, and live rock, elements capable of giving the produced wines great mineral expressiveness, verticality, and tension.
Here, Zmagoslav Petri? decides to found Guerila in 2005, basing his production vision on an idea of “guerrilla” against the cultural rooting increasingly directed towards the massive use of allochthonous grape varieties at the expense of indigenous ones, and against intensive, interventionist, and conventional agriculture aimed at commercialization towards foreign markets rather than enhancing the peculiarities of its own terroir.
Production therefore focuses on the use of indigenous and forgotten grape varieties such as Zelen, Pinela, Rebula, and Malvazija, working in the vineyard from day one in biodynamics and in the cellar with minimal use of sulfur and filtration, experimenting a lot in terms of aging.
Stylistically, Guerila wines are precise and clean, best expressing the characteristics of a terroir like that of Vipaska: minerality, fruit crunchiness, and savoriness.
The Malvazija is a Malvasia Istriana from vines about 20 years old on schistous soils.
A complex, fresh, mineral, savory, and crunchy wine, where the typical structure of the Vipaska soils finds great balance with the generosity of Malvazija, giving life to a sunny, deep, and gentle glass.

In the 15th. In the 19th century, there was a lime kiln in this location, which leads to the current name of the site. The current vineyard covers about 5 hectares. Of these, 1.1 hectares belong to the Bassermann-Jordan winery. The vineyard is slightly sloped to the south and is bordered to the north by several sandstone walls. The hand-selected grapes come from the oldest vineyards. These were gently pressed and the must was sedimented overnight. Fermentation took place 60% in barrels and 40% in steel tanks, with the winery's own yeasts. The filling took place in early July, until then the wine remained on the lees to give it even more depth and complexity. On the nose, the wine reveals an aroma of yellow fruit, including ripe peach and apricot. The Deidesheimer KALKOFEN GG 2022 shows an elegant reduction that gives the wine additional complexity and depth. This fine reduction plays a subtle and smoky note, which provides structure and nuances to the fruit aromas. On the palate, the wine is dense and concentrated, with an impressive intensity that emphasizes the complexity and depth of this great plant. Typical of the lime kiln, the wine reveals a scarce and chalky minerality. This minerality gives the wine an almost salty freshness and a distinctive character that sets it apart from other wines.

WEATHER CONDITIONS
• Moderately rainy and cold winter until February, then a return to milder temperatures.
• April 1st and 2nd: a severe frost episode hit the vineyard, causing a 40% loss of the harvest.
• May/June: rapid flowering and accelerated succession of phenological stages.
• Mid-June: first wave of intense heat.
• End of June: between 5% and 30% of the vineyard affected by thunderstorms with some hail, depending on the plots.
• Hot, dry summer, with high temperatures.
• End of July: relatively rapid veraison.
• Mid-August: some beneficial rains for the vines.

HARVEST
The harvest for dry whites began early on August 18th, breaking all our previous records. The grapes were in excellent condition, with a very good level of acidity.
We monitored the aromatic maturation of each plot to harvest with maximum precision, alternating Sémillon and Sauvignon Blanc depending on the terroir.
For Château Suduiraut Vieilles Vignes Grand Vin Blanc Sec, the plots with vines of about 45 years were harvested between August 22nd and September 2nd.
The grapes were rich, concentrated, with thick skins, a sign of the sunny character of the vintage.
The quality is exceptional, with a perfect balance between fruity and floral aromas, rich taste, and a delicate final acidity.
The yield was quite low due to various climatic events.

WINEMAKING
• Skin maceration only for the Sauvignon Blanc, with a duration varying depending on the harvest: from 2 to 12 hours.
• Gentle and long pneumatic pressing: about 2 hours and 30 minutes.
• Cold clarification at 10°C.
• Fermentation in barrel, with 30% new wood, at a controlled temperature between 17 and 22°C.
• No malolactic fermentation.
