Vinification
The grapes are hand-picked in boxes, followed by crushing and gentle pressing. Alcoholic fermentation takes place in vertical steel tanks at about 16 °C, then the temperature is further lowered to prevent the possible occurrence of malolactic fermentation. The wine is bottled at the end of spring. Thanks to the low fermentation temperature, the yeasts stop their fermentative activity, leaving a residual sugar of about 5 / 6 grams per liter, which helps express the varietal character of Riesling.

Tasting
In appearance, it is straw yellow with greenish reflections. The aroma is fruity and finely tropical in its youthful phases, with hints of a slight vegetal note that transforms, in the subsequent evolutionary phases in the bottle, into mineral and hydrocarbon notes typical of this grape variety. On the palate, the entry is full, with a nice salinity and a lovely fruit sweetness, finishing long, fresh, and persistent.

Vinification
The grapes are hand-picked in boxes, followed by gentle crushing and pressing. The alcoholic fermentation of the must occurs in vertical steel tanks at a controlled temperature of about 18°C. The malolactic fermentation also takes place partially in steel. Aging period for about 6 months in steel. Bottling takes place at the end of spring to be marketed after a few months.

Tasting
The wine has a straw yellow color and a fruity aroma, with hints of bread crust. On the palate, the sensation of fullness and harmony is enhanced by the acidity that provides freshness and a long aftertaste.

The Arneis, an exclusive grape variety of the steep hills of Roero, is, along with Nebbiolo, the architect of the notoriety of our territory. To enhance the prestige that this grape variety deserves, starting from 2004, an exclusive selection of Roero Arneis has been created, with the clear intention of offering an additional opportunity to fully appreciate the characteristics and potential of this great grape variety.
The grapes come from two selected vineyards chosen for their sandy terroir and high altitude: from the soft, sandy soils of the Tanone cru, in the municipality of Vezza d’Alba, and from the Renesio Incisa cru in Canale, on the famous hill that gave birth to the Arneis grape towards the end of the 1400s. It is said that it was precisely in Renesio that this white grape differentiated itself, initially called “Nebbiolo bianco” due to the shape of the bunch and the size of the berries similar to Nebbiolo.
On this particularly sandy type of soil, Arneis expresses all its potential of aroma and elegance. The Cecu has intense aromas of tropical fruits and fascinates the palate with the refinement of a savory and persistent taste destined to improve in the coming years thanks to its complexity and fullness.
We wanted to dedicate this selection to grandfather Francesco Carbone, better known as “Cecu d’la Biunda”: a mild and gentle person, a great enthusiast of Arneis when it was still unknown beyond regional borders.
Sensory profile
Color: bright intense straw yellow.
Nose: the wine has great olfactory intensity. It shows a combination of great depth that slowly develops towards sensations of significant aromatic freshness, ranging from pineapple to white currant.
Taste: the entry on the palate is quite marked by a splendid gustatory freshness that gradually reveals its true powerful and enveloping character. Its development is very growing and ends with a rich and very persistent finish, showcasing the triumph of savoriness.

The Derthona Vigneti Massa is an iconic and representative white wine, produced by what is the true pioneer of Timorasso in Italy. There are not many cases where the idea of a grape variety coincides almost entirely with a winemaker, and when this happens, it means that you are dealing with a true flagbearer, capable of revaluing and revitalizing a territory, just like in the case of Walter Massa with Timorasso and the Colli Tortonesi. A showman and deep connoisseur of vineyard and territory, Walter took the reins of the family winery in the 1970s, deciding to make a radical turn in local viticulture, favoring local varieties, limiting yields, and minimizing treatments in the vineyard, but above all sensing the enormous potential of Timorasso and elevating it to the local flagship white grape variety. The wines, ranging from deep and territorial reds to long-range whites, are true pieces of the history of Italian wine, indispensable in the cellar of every enthusiast.
The wine Derthona takes its name from one of the most famous crus dedicated to Timorasso, and Walter's wine is precisely a pure expression of the eponymous grape variety. In the vineyard, as already mentioned, minimal intervention is practiced, and in the winery, the process is consistent, with spontaneous alcoholic fermentations and aging of the liquid on fine lees.
The Derthona Vigneti Massa presents itself in the glass with a medium intensity straw yellow color. The nose is broad and rich, where clear hints of acacia honey, flint, and white flowers stand out, creating a profile that intertwines fleshiness and mineral puffs. The sip is filling and has a creamy texture, perfectly balanced between its material richness and the saline component that significantly extends the wine's persistence. An undisputed flagbearer.

The white wine Nascetta from Novello “Anas-Cetta” is a tribute that Elvio Cogno pays to the Piedmontese terroir, particularly to the municipality of Novello. This area is indeed the only one where the ancient grape variety Nascetta is cultivated, a grape that the winery firmly believes in, having produced it since 1994, with the intent of bringing it back into vogue among the younger generations of enthusiasts. A bottle that impresses with its sapidity and freshness, and that has an almost “Mediterranean” soul, truly original within the Langhe. Once tasted, you will become its first ambassadors.
LAnas-Cetta is a Nascetta from Novello that originates from the use of an indigenous white grape variety from the Alba area, which is little cultivated today, the Nascetta. The plants of this variety, which are around 15 years old, grow in a vineyard owned by the Elvio Cogno winery located about 350 meters above sea level. The grapes, carefully selected during the harvest phase, which begins at the end of September, ferment spontaneously in steel, thanks to the presence of indigenous yeasts, at a controlled temperature. The maturation phase, lasting 6 months, also takes place in steel, during which the wine remains in contact with its own yeasts.
The Nascetta from Novello “Anas-cetta” develops in the glass with a typically straw-yellow color, characterized by slight veins that tend towards gold at the rim. The nose is interesting, moving on pleasant citrus notes, mainly of bergamot, enriched by mineral touches and sensations that recall aromatic herbs. On the palate, it is light-bodied, harmonious, with a savory and pleasantly fresh sip. A drinkable product, of excellent craftsmanship, with which the Elvio Cogno winery demonstrates its skill even when tackling the production of white wines.
