HARVEST PERIOD: Late October – early November.
CULTIVAR: Moraiolo, Leccino, Frantoio.
EXTRACTION SYSTEM: Continuous cycle two and a half phases cold within 12 hours of harvesting.
OIL APPEARANCE: Clear.
COLOUR: Emerald Green.
AROMA: Fruity of fresh olives.
FLAVOUR: Characteristic of fresh and fragrant olives, decisive body and pleasantly spicy.
DENSITY: Medium.
PAIRING: Raw on all dishes with pronounced flavours, also perfect on bruschetta, salads, red meats, grilled meat and vegetables, boiled dishes and legume soups. For cooking, it is to be used for preparing sauces and frying.
