The vinification and aging take place exclusively in steel. The result is a fresh and light wine, which on the nose presents fruity notes, well integrated with the mineral scents typical of the grape variety. The taste is pleasant, with good complexity, possessing an excellent balance between acidity, structure, and persistence, where floral notes alternate with citrus ones, thus enhancing the most authentic and luminous characteristics of the type.
A finish with a hint of almond gives it a slightly bitter aftertaste. A wine of excellent drinkability.
Skin maceration in the press and soft pressing of the grapes, static cold decantation of the must, alcoholic fermentation at a controlled temperature of 16°C in stainless steel tanks.
Rabbits and killer dogs accompany the wine, a typical example of drôlerie, the bizarre figures that appear and decorate the margins and initials of illuminated manuscripts from the Gothic era. Harmless little creatures that transform into hunters, warriors, even executioners and torturers, wielding spears, axes, and swords with the skill of knights. An upside-down world very popular between the 13th and 16th centuries, a tribute to the irony of the monk scribes.

The Bolgheri Vermentino from the Tenuta Guado al Tasso of Antinori is a fruity and savoury white wine, originating from a denomination famous worldwide for the great reds produced with the renowned Bordeaux grape varieties. In reality, Vermentino has always dwelled in these lands. From the Colli di Luni to the Maremma, the entire Tuscan coast is very suited for the cultivation of this variety with a Mediterranean profile. Antinori offers an interpretation with a typically territorial, sunny, and marine face, which pairs very well with seafood cuisine.
The Bolgheri Vermentino from Antinori is born in the Tuscan estate of Guado al Tasso. The property is located in the Alta Maremma, in a beautiful coastal area surrounded by the gentle hills of the Bolgheri amphitheatre, which protect the area from north-eastern winds. The climate is temperate, mild, and always very breezy due to the constant presence of marine breezes. The sunny exposures of the vineyards favour perfect ripening of the grapes with particularly rich aromatic profiles. The soils are alluvial in nature, predominantly silt-sandy in composition. The Vermentino grapes come from different vineyards of the estate and upon arrival at the winery are gently pressed and vinified separately by parcel. Fermentation takes place in stainless steel tanks at a temperature of about 16 °C. The best batches are then blended and aged for a few months in steel before bottling.
The Bolgheri Vermentino produced at the Tenuta Guado al Tasso of Antinori is a young and fresh version of the most typical white wine of the Tuscan coast. A label with a classic profile, which enhances the best qualities of a grape variety that expresses itself best in coastal, sunny, and windy areas. In appearance, it presents a bright straw yellow colour. On the nose, it is elegant and intense, with aromas of white flowers, aromatic herbs of the Mediterranean scrub, citrus peel, and fragrant white-fleshed fruit. Smooth and fruity, it offers a savoury sip with pleasantly rich and expressive fruit, finishing fresh, harmonious, and mineral.

Poggio alle Gazze dell’Ornellaia owes its elegant Mediterranean style to the unique microclimate of the estate. This authentic gift of nature allows for the production of a wine, predominantly made from Sauvignon Blanc grapes, that boasts a sumptuous structure and mature fruity notes combined in a style of great elegance.
The grapes were hand-picked in 15 kg crates in the early hours of the morning and immediately cooled upon arrival at the winery to preserve all the aromatic potential. After careful selection, the whole bunches underwent a slow and gentle pressing with maximum attention to protection against oxidation. After a static decantation of about 12 hours, the musts were placed in new barriques for 25%, used for 25%, and in steel and concrete tanks (50%). The alcoholic fermentation took place at temperatures not exceeding 22°C. Malolactic fermentation was not carried out. Maturation lasted for 6 months on the lees with scheduled batonnage throughout the period. Before bottling, the blend of the various lots was made and a light clarification was performed. The wine was then subjected to further aging in the bottle for 12 months before being released on the market.

ANTONIO CAMILLO PROCANICO

A very interesting wine, produced from Trebbiano grapes from vines over seventy years old, this Procanico by Antonio Camillo. The colour is a beautiful amber yellow, dense and consistent in the glass. The aromas recall notes of the Mediterranean scrub, dried rosemary, thyme, but also notes of candied yellow fruit, pineapple and yellow peach. On the palate, softness and freshness dance, intertwining skillfully to provide a precious and pleasant balance that makes this wine perfect with various more complex fish-based preparations. Finesse, intensity of taste and aroma, and persistence define a more elegant and territorial finish, but also characterized by a certain austerity and depth. Excellent also paired with spiced white meats!

The vineyards of the Company that give life to this wine are of extremely small size; the grapes are brought to optimal ripeness and then processed separately, from fermentation to aging. These grape varieties combined together create a perfectly balanced Super Tuscan, rich in minerality and freshness, surprisingly lively. The first Chardonnay vineyard at Castello Romitorio was planted in the early '90s. The initially chosen plot turned out not to be ideal for Chardonnay, therefore the Chia family decided to move the vineyard to another side of the estate. Today, this tiny vineyard facing North-West has found its ideal environment where the roots can spread in soils mainly composed of Galestro. Trebbiano became part of the blend with the 2021 vintage, following the acquisition of one of the oldest vineyards of Trebbiano Toscano (or Procanico), located in Loc. Case Sparse (Scansano). This grape variety is typical of Maremma and is considered one of the most versatile, as it easily adapts to different climates and temperatures. Nevertheless, if grown in the perfect terroir, Procanico can achieve a balance and elegance that rivals the best white wines in the world. The must macerates on the skins for a short period of time, followed by gentle pressing and then undergoes further cooling. Following natural sedimentation, the liquid begins the fermentation process. The resulting wine matures on the lees and is followed by a period of bottle aging in the cellar at controlled temperatures.
